Tournaments at that stage are pretty expensive. The first negative against this is, if you converted your T1-3 to T4-6, you will not be able to carry on with your catering play style unless you happen to have a huge store of goods. I was moving a bit faster at ~30 days per chapter, but that won't make that much of a difference. Also keep in mind that chapter 16 needs about 10mm/8mm/6mm of T1/T2/T3 to complete, so you better have a good stockpile by then. But again, I have quite a bit here (including stuff that is not available anymore), I have no more expenditures of regular goods except for Spire negotiation (no catering in tournaments at all), and only then I can live without regular T1-T3 comfortably. These are basically free now. I produce quite a bit (200+ AW levels, 18 Festival Merchants), and can only sustain 2+3+2 production with a bit of spare seeds. Now, I don't know your seeds production capabilities, but running all sentient production non-stop takes a lot of seeds. So you probably don't go very far in tournaments, which is fine but you probably would be able to do even less without T1-T3. It is literally impossible to go deep into tournaments on catering alone - no one has production capacity to sustain it, and certainly not with the setup you have. First of all, catering just simply doesn't work in the late game (I assume you're talking tournaments). It is certainly doable, but in your case I have doubts. I have no regular T1-T3 manufactories (done chapter 16), so only get regular goods from event buildings and decay.
